cream of broccoli soup
- bring to boil
- 4 c. water
- 4 broccoli florets
- reduce heat, cooking an additional 3 minutes
- drain, reserving the water
- send half of the cooked broccoli in food processor
- in large cooking pot, melt
- add
- cook 1-2 minutes until soft
- stir in
- cook, stirring occasionally 1-2 minutes
- add reserved water and
- bring to boil, stirring constantly
- reduce heat and simmer, stirring constantly until thickened
- stir in
- 2½ c. milk
- ¼ t. nutmeg
- ¼ t. black pepper
- chopped broccoli
- heat through
- adjust seasons to taste, serve with grated cheese
