blueberry streusel muffins


  1. preheat oven to 400º

  2. mix until crumbly, sit aside

    • 1/4 c. flour

    • 2 T. brown sugar

    • 3 T. cold butter

    • 1/4 t. cinnamon



  3. mix

    • 1 c. milk

    • 1/4 c. vegetable oil

    • 1.2 t. vanilla

    • 1 egg



  4. in seperate bowl, mix

    • 2 c. flour

    • 1/3 c. sugar

    • 3 t. baking powder

    • 1/2 t. salt



  5. stir liquid and dry ingredients together

  6. fold in

    • 1 c. blueberries



  7. divide batter evenly among 12 muffin cups

  8. top evenly with streusel

  9. bake 20 minutes or until golden brown



  • may subsitute all-purpose flour with whole wheat flour
