blackberry cream cheese coffee cake


  1. preheat oven to 350°

  2. butter a 9 inch pan, set aside


streusel topping

  1. mix together

    • 1/3 c. flour

    • 1/3 c. sugar

    • 1/2 t. cinnamon

    • 1/4 c. cold butter




cream cheese filling

  1. beat until very smooth

    • 8 oz. cream cheese

    • 1/4 c. sugar

    • 1 egg

    • 1/2 t. vanilla

    • 1 T. lemon zest

    • 1 T. flour




cake batter

  1. whisk together

    • 1 c. flour

    • 1 t. baking powder

    • 1/8 t. salt



  2. in a separate bowl, cream

    • 1/4 c. butter

    • 1/2 c. sugar

    • 1 egg

    • 1/2 t. vanilla

    • 1/3 c. milk



  3. mix in flour mixture only until combined


assembly

  1. spread batter onto pan

  2. spread cream cheese filling over batter

  3. scatter over filling

    • 1 c. blackberries



  4. top with streussel
