- Mix topping ingredients
- 1/4 c. brown sugar
- 1/4 c. oats
- 1/4 c. coconut
- 1/4 c. pecans
- 2 T. melted butter
- Mix, let stand 3 minutes
- 1 c. oats
- 8 oz. crushed pineapple
- 1/2 c. milk
- 1 egg
- Stir in
- 1/4 c. melted butter
- Mix together
- 1 c. flour
- 1/2 c. sugar
- 1/3 c. pecans
- 1 t. salt
- 1 T. baking powder
- Mix oat mixture with flour mixture just until moistened
- Place in muffin cups
- Sprinkle with topping
- Bake 20 minutes at 400°
