fortune cookies

1. prepare 14 fortunes


2. preheat oven to 375º


3. grease 2 cookie sheets


4. whisk together
   
   
   
   • 2 T. butter
   
   
   • 1/4 c. sugar
   
   
   • 1 egg white
   
   
   • 1 t. vanilla
   
   
   • pinch salt
   
   
   
   


5. beat in until batter is smooth
   
   
   
   • 1/4 c. flour
   
   
   
   


6. drop 2 spoons of batter onto cookie sheets


7. spread batter evenly to form 3-inch round piles


8. bake 3 minutes or until lightly golden


9. loosen cookies with metal spatula


10. immediately fold each cookie in half, inclosing fortune


11. fold in half again, resting on outer edge of small bowl


12. repeat with remaining batter and fortunes

• yield: 14 cookies
