Georgian Khachapuri

These buns are sold from street stalls as warm snacks. These sealed bread parcels envelop a meltingly delicious cheese filling.
  1. Mix together
    • 1 T. yeast
    • 2/3 c. lukewarm water
  2. Stir in, beat until smooth
    • 4 c. white bread flour
    • 2 T. butter softened
    • 1 t. salt
  3. Mix in additional flour until easy to handle
  4. Knead till smooth and elastic
  5. Allow to rise in greased bowl until doubled in size (1 hour)
  6. Meanwhile mix the filling
    • 2 c. grated sharp cheddar cheese
    • 8 oz. munster or taleggio cheese cubed
    • 1 egg, lightly beaten
    • 1 T. butter softened
    • plenty of salt and freshly ground black pepper
    • ham pieces (optional)
  7. knead dough for 2-3 minutes
  8. divide into 4 equal pieces and roll each out into a 8 in. circle placing each in popover pan
  9. fill each circle with ¼ of filling then fold up edges to the top and twist it to secure
  10. Allow to rise (20 minutes)
  11. Brush the top of the rolls with a mix of 1 egg yolk and 1 T. water
  12. Bake 25-30 minutes at 350°
