pumpkin-nut muffins


  1. preheat oven to 375º

  2. mix

    • 2 1/3 c. flour (part whole wheat)

    • 2 t. baking powder

    • 2 t. pumpkin spice

    • 2 beaten eggs

    • 3/4 c. sugar

    • 1 1/4 c. pumpkin

    • 2/3 c. oil

    • 1 t. salt

    • 1/3 c. milk

    • 3/4 c. walnuts

    • 3/4 c. raisins



  3. place in muffin tins

  4. bake 20 minutes



  • variation: add strudel topping
